Ingredients For grilled chicken club sandwich

  • 3 c
    brine
  • 4
    boneless chicken breast
  • HERB MAYONNAISE
  • 6 Tbsp
    mayonnaise
  • 2 Tbsp
    each of basil,cilantro ,tarragon
  • dash
    salt and pepper and lemon juice
  • FOR SANDWICHES:
  • 1 c
    sliced apples
  • 1 c
    grilled onion
  • 2 Tbsp
    olive oil
  • 8 slice
    cook thick cut apple wood-smoked bacon
  • 4
    ciabatta rolls, cut in half horizontally
  • 1
    head of bibb lettuce, wahed and dried
  • 4 slice
    provolone cheese
  • 1
    roma tomatoe

How To Make grilled chicken club sandwich

    For Herb Mayonnaise: mix mayonnaise and herbs to gather in a small mixing bowl and place in refrigerator. Brine the chicken breast in the refrigerator for at lease 6 hours.

    Once you remove chicken from brine , rinse off chicken and pat dry. Grill chicken until done. sauté onion and apples in olive oil until caramelize. remove and place in small bowl.

    Place the rolls on a clean work surface and spread about 1 tablespoon of the Herb Mayonnaise on each half. On the bottom halves place the sliced chicken breast and add two slices of bacon and cheese.

    Top with several lettuce leaves and 1/4 of onion mixture.close the sandwiches with top half of each roll and grill until warm and cheese has melted.
