Spice up your chicken dinner with this green chile chicken recipe. It's a super easy weeknight meal with a Mexican flair. Boneless chicken breasts are topped with green chiles, sour cream, and shredded cheese. Once baked, the meal tastes like chicken enchiladas without the carbs (tortillas). The recipe can be easily scaled based on the size of your family.

Ingredients For green chile chicken

  • 2-4
    boneless, skinless chicken breasts
  • 1 can
    chopped green chiles (1 Tbsp per breast)
  • 1 pkg
    sour cream (3-4 Tbsp per breast)
  • 1 c
    grated cheddar cheese (about 1/4 c per breast)
  • 1/4 tsp
    salt (per breast)
  • 1/8 tsp
    pepper (per breast)

How To Make green chile chicken

  • Season chicken breasts.

    Preheat oven to 350 degrees. Dry boneless, skinless chicken breast. Salt and pepper. Place the chicken on a lightly oiled or greased pan.
  • Top with green chiles.

    Top chicken with a tablespoon or more of green chiles.
  • Cover chicken with sour cream.

    Spread and coat with sour cream to cover chicken and green chilies.
  • Bake the chicken breasts.

    Bake the prepared chicken in the hot oven for 35 minutes. Insert a knife into the chicken to cut and check doneness. Juices should run clear with no pink.
  • Top with shredded cheese.

    Top with the cheddar cheese.
  • Baked until the cheese is melted.

    Bake for 10 minutes more until the cheese is melted. Serve with a salad and your favorite vegetable or side dish.
