This is my Aunt Anita Serna's recpe I added the hot sauce!

Ingredients For green chili chicken enchiladas

  • 2 large can
    chicken breast with juice of 1 can
  • 2 can
    cream of chicken soup
  • 1 can
    milk (use empty soup can)
  • 1 can
    green chiles
  • 16 oz
    mexican cheese blend
  • 1 pkg
    16-18 soft corn tortillas
  • 1/2 c
    finely chopped onion
  • lousiana hot sauce to your liking

How To Make green chili chicken enchiladas

    2 mixing bowls 1 large 1 med. In large bowl mix chicken soup, milk, green chili, hot sauce. In med, bowl place chicken and onions. Add about 1 1/2 cups of sauce to chicken mixture and stir.

    Heat tortillas 6 at a time in the microwave wrapped in a towel, about 1 min to make plyable. Place 2 spoonfuls of chicken mixture in each tortilla.

    Roll up tightly place seam sidedown in 13x9 glass pan. Make 2 rows. Pour remaining sauce over tortillas, top with cheese Bake 375 35-45 min until lightly brown

    This is even quicker if you do layers like lasagna! Add 1/2 cup more sauce to the chicken. Divide everything into 3rds. Start with 1/3 of the chicken then 1/3 cheese then layer 6 tortillas Then chicken again ect. Only do 2 layers of tortillas. last layer is cheese.
