After trying this soup at a local diner, I was hooked and begged for recipe! It is a great winter soup but also a great soup for spring since its so refreshing!

Ingredients For greek lemon chicken soup

6 cchicken broth
-
1/2 cuncooked orzo pasta

4 lgeggs
-
1/3 clemon juice
-
1 ccarrot, shredded
-
1/4 tspsalt and pepper

8 ozcooked chicken ( shredded or bite size pieces)
How To Make greek lemon chicken soup

1Bring broth to a boil in a large saucepan.

2Add orzo & reduce heat and simmer 5 minutes or until orzo is slightly tender.

3Remove from heat. Place eggs and juice in a blender or food processor, process until smooth.

4Remove 1 cup broth from pan with a ladle, making sure to leave out orzo. With blender or processor on, slowly add broth, process until smooth.

5Add carrot, salt, pepper and chicken to pan. Bring to a simmer over medium-low heat and cook 5 minutes or until orzo is done.

6Reduce heat to low. Slowly stir in egg mixture; and cook 30 seconds, stirring constantly(do not boil).
