Ingredients For greek chicken & pork brat kabobs

1 pkgpork & chicken traditional brats
-
2 tspall-purpose greek seasoning
-
juice & zest of 1 lemon

3 Tbspextra virgin olive oil

1/2 tspcourse black pepper

2 mdwhite eggplant fingers, sliced 1 inch thick

2 mdgreen eggplant fingers, sliced 1 inch thick

1/2 smred onion, cut 1 inch

18cherry tomatoes
-
12-18kalamata olives, pitted
-
aged balsamic vinegar to drizzle

2 ozherb goat cheese, crumbles
-
italian parsley, chopped for garnish
How To Make greek chicken & pork brat kabobs

1Soak 6-8 bamboo skewers in water for 30 minutes. Toss all the veggies in a bowl with olive oil, Greek seasoning, lemon juice, zest and pepper. Assemble skewers: eggplant, tomatoes, sausage, onion & olives. Repeat until skewer is complete Grill on a medium high heat for 15 minutes or until juices run clear, so turning at least once. Remove from grill and drizzle aged balsamic and top with goat cheese and parsley
