I was fortunate to receive a community cookbook from my grandmother. This recipe was one of her favorites and she often served this to us when we visited. It always brings back wonderful memories of summer. I can see her in the kitchen laughing and singing as she made this comforting dish. You will want to serve this with creamy mashed potatoes and your favorite steamed vegetables for a hearty meal. The gravy finishes off the dish.

Ingredients For grandma's thunder bay-style oven fried chicken

  • DRESSING
  • 1/2 c
    butter, melted (may sub margarine)
  • 1 can
    cream of chicken soup, divided (may sub mushroom soup, 10 oz)
  • 6 c
    dry bread, medium dice
  • 1/4 c
    chopped sweet onions
  • CHICKEN
  • 1/2 tsp
    fine sea salt
  • 1/2 tsp
    freshly ground black pepper
  • 1 1/4 tsp
    finely ground sage
  • 1/2 c
    unbleached white flour
  • 4 lb
    chicken pieces or chicken breasts
  • 2 Tbsp
    vegetable oil, for frying
  • GRAVY
  • 2 Tbsp
    unbleached white flour
  • 1/4 tsp
    ground poultry spice, optional
  • 1 1/4 c
    water

How To Make grandma's thunder bay-style oven fried chicken

    Preheat oven to 350 degrees F. To make the dressing, combine the melted butter with 1/2 of the can of mushroom soup, mixing well; add the bread cubes and onion to bind the mixture all together. Add the bread dressing to the bottom of your roasting pan and set aside until needed.

    Prep the chicken - In a large bowl, add salt, pepper, sage and 1/2 cup of flour together, mixing well. Dip the chicken pieces in the seasoned flour. Add oil to a frying pan and brown the chicken well. Once the chicken is well browned add it to the top of the prepared dressing in a roasting pan.

    Make the gravy by combining the flour with the remaining 1/2 can of soup in a small bowl and then add the poultry seasoning if desired. Mix well. Add water and mix until smooth. Pour the mixture over the dressing and chicken. Cover tightly with a lid or foil and bake at 350 degrees F for 1 hour. We hope you will enjoy this as much as we do.
