I'm Grandma by the way. Did you ever notice how kids just love 2 minute noodles? I came up with this recipe that sneaks lots of goodies and deliciousness in with them and my grand kids just love it! Plus it's easy and one-pot! The ones who don't like mushrooms give them away to the ones who love them. My son and I always hope for leftovers we can eat the next day but it's yet to happen. They just keep coming back for more until it's all gone.

Ingredients For grandma's creamy chicken with noodles

1 Tbspolive oil

1/2 tspgrated ginger (from jar is fine)

1/2 tspcrushed garlic (from jar is fine)

3 stalkspring onion, finely chopped

1 stickcelery, halved lengthways and finely chopped

1/4red or green pepper, finely chopped
-
1 1/2 csliced button mushrooms
-
1 cfrozen peas and corn (or any frozen veg)
-
2 cchicken stock (liquid or made with large cube)
-
1 tsplemon juice (optional)
-
1 tspdijon mustard or dried mild mustard powder
-
1 tspdried parsley or a bit more if fresh

2 pkgmaggi 2 minute noodles, chicken flavour
-
1 clite cream (or evaporated milk is ok)
-
1/2barbeque chicken (or any leftover cooked)
How To Make grandma's creamy chicken with noodles

1Prepare all vegetables and place in a small bowl.

2Pull the flesh off the chicken with your fingers, into strips, and place into another small bowl.

3In a large frying pan add the oil, ginger and garlic and when hot add all the vegetables. Stir until they are softened (about 5 minutes).

4Add lemon juice, mustard and parsley and stir through.

5Add chicken stock and then 2 minute noodles (you can use one of the flavor sachets if your stock isn't strong enough). Then crumble the dried noodles into the pan. Stir through until all are softened, about 2 minutes.

6Add the lite cream and the chicken pieces and adjust the liquid if needed (use a little more cream or milk or even hot water). When all is heated through, serve in soup bowls with a fork.
