Ingredients For gooey mexican chicken

  • 4
    chicken breast filets
  • 2 lg
    sweet onions
  • 5 c
    sliced mushrooms
  • 3 clove
    minced garlic
  • 4 tsp
    olive oil, light
  • 4 c
    monterey jack cheese with jalapeno peppers
  • 4 Tbsp
    fajita seasoning
  • 3 Tbsp
    butter, softened

How To Make gooey mexican chicken

  • 1
    Place chicken breast between wax paper and pound until thin.....do all of them...sprinkle with fajita seasoning on both side...place oil in skillet and let it get hot then add chicken breast...in another skillet add oil and add 2 tablespoons of butter, garlic, onions and mushrooms. sautee until carmilized.....once chicken is done..top with the onions and stuff and top with cheese..Place in oven to melt the cheese.....mmmm.mmmm. good......
