Stuffed chicken is a delicious way to elevate chicken breasts. These goat cheese, bacon, and spinach chicken roll-ups are healthy and flavorful. The spinach filling has salty, crumbled bacon and tangy goat cheese. It's spread over the sliced chicken breasts, rolled, and baked. Not only does it help to keep the chicken moist, but when sliced in half, it makes the presentation pretty. A meal you could serve to your family or for special dinner guests.

Ingredients For goat cheese, bacon, and spinach chicken roll-ups

  • 1 1/2 c
    frozen spinach, thawed and drained
  • 3 slice
    bacon, cooked (reserve grease)
  • 1/4 c
    crumbled goat cheese
  • 2 clove
    garlic, minced
  • 1/2 tsp
    black pepper, divided
  • 1/4 tsp
    iodized sea salt, divided
  • 1 lb
    thinly sliced chicken breast (approximately 5)
  • 1 Tbsp
    reserved bacon grease, avocado oil or olive oil, divided
  • 1/2 lb
    asparagus, trimmed
  • aged Balsamic vinegar (optional)

How To Make goat cheese, bacon, and spinach chicken roll-ups

  • Squeeze all the moisture from the thawed frozen spinach.

    Preheat oven to 400. Squeeze all the moisture from the thawed frozen spinach and add to a medium bowl.
  • Add garlic, crumbled bacon, goat cheese, pepper, and salt.

    Add garlic, crumbled bacon, goat cheese, 1/4 tsp pepper, and 1/8 tsp salt. Combine.
  • Spread spinach mixture on the chicken.

    Spread the cheese mixture down the middle of each breast and roll. Secure with toothpicks or string.
  • Bacon grease in a skillet.

    In an 8-inch cast iron or ovenproof skillet, heat 1 1/2 tsp reserved bacon grease or oil over medium heat.
  • Browning the chicken.

    Brown each chicken roll on each side.
  • Chicken finishing to cook in the oven.

    Place in oven; bake for 10 to 12 minutes.
  • Toss asparagus in oil, pepper, and salt.

    Meanwhile, toss asparagus with the remaining 1 1/2 tsp oil, 1/4 tsp pepper, and 1/8 tsp salt.
  • Asparagus added to baking dish with the chicken.

    Add to skillet in oven. Bake until chicken is done and asparagus is tender, about 8 - 10 more minutes.
  • Removing toothpicks from the chicken and drizzling with balsamic vinegar.

    If desired, drizzle with vinegar. Remove toothpicks prior to serving.
