Ingredients For glass noodle salad

4 ozbean thread noodles or aka glass noodles

1 lgboneless skinless chicken thigh

6 lguncooked shrimp peeled and deveined

2 Tbspolive oil

2scallions chopped
-
2 cwater
-
2 Tbsplemongrass paste

1 Tbsplime juice
-
2 Tbspfish sauce
-
1 Tbsplime juice

1 Tbspwater

2 Tbspbrown sugar

hoisin sauce, roasted crushed peanuts and cilantro for garnish
How To Make glass noodle salad

1Place the noodles in a bowl and cover them with cold water and let sit for 1 hour. Drain.

2Place the chicken and shrimp on a cutting board and chop with chef's knife until the meat is well minced.

3In a pot add the 2 cups of water, the lemongrass paste and 1 tbsp lime juice and bring to a boil

4Add the oil to a skillet. Add the garlic and scallions and cook 1 minute. Add the meat and cook until no longer pink.

5Place the noodles in the pot with the lemongrass water. Boil about 1 minute and drain again.

6Add the noodles to the meat. Mix the fish sauce, lime juice, and brown sugar together and pour over the noodles. Cook and stir until well incorporated.

7Top with peanuts, cilantro and drizzle with hoisin sauce
