Ingredients For glass noodle salad

  • 4 oz
    bean thread noodles or aka glass noodles
  • 1 lg
    boneless skinless chicken thigh
  • 6 lg
    uncooked shrimp peeled and deveined
  • 2 Tbsp
    olive oil
  • 2
    scallions chopped
  • 2 c
    water
  • 2 Tbsp
    lemongrass paste
  • 1 Tbsp
    lime juice
  • 2 Tbsp
    fish sauce
  • 1 Tbsp
    lime juice
  • 1 Tbsp
    water
  • 2 Tbsp
    brown sugar
  • hoisin sauce, roasted crushed peanuts and cilantro for garnish

How To Make glass noodle salad

    Place the noodles in a bowl and cover them with cold water and let sit for 1 hour. Drain.

    Place the chicken and shrimp on a cutting board and chop with chef's knife until the meat is well minced.

    In a pot add the 2 cups of water, the lemongrass paste and 1 tbsp lime juice and bring to a boil
  • 4
    Add the oil to a skillet. Add the garlic and scallions and cook 1 minute. Add the meat and cook until no longer pink.

    Place the noodles in the pot with the lemongrass water. Boil about 1 minute and drain again.

    Add the noodles to the meat. Mix the fish sauce, lime juice, and brown sugar together and pour over the noodles. Cook and stir until well incorporated.

    Top with peanuts, cilantro and drizzle with hoisin sauce
