This is my entry for the Ninja Chef's Challenge using Chicken Breast, Ginger, and Avocado. I absolutely love Asian cuisine and when I saw the ingredients for the challenge my thoughts automatically went to making something with an Asian flair. This was so good and healthy for you too!

- SALAD COMPONENTS

11 ozcanned mandarin oranges, drained

6 ccabbage, shredded

2 ccubed or sliced cooked chicken breast

1 lgfirm-ripe avocado, pitted, peeled, and cubed

4green onions, trimmed and sliced diagonally

1/4 cchow mein noodles

2 Tbspsesame seeds, toasted
How To Make ginger mandarin chicken salad with avocado

1In a bowl, whisk together vinegar, brown sugar, soy sauce, Sriracha sauce, and ginger. Slowly drizzle in oil, whisking constantly. Season with salt. Set dressing aside.

2In a large serving bowl, toss cabbage and chicken with dressing.

3Top with avocado, orange slices, and chow mein noodles, then garnish with green onions and sesame seeds.
