I just came across a letter dated March 27, 1995 from Naoki Sekiya a student we befriended while at the University of Alabama. He ws sending me his recipe for Ginger Chicken.

Ingredients For ginger chicken

6boneless, skinless chicken thighs, cut into cubes

1 1/2inch piece of fresh ginger

1 Tbspsoy sauce

kosher salt and freshly ground pepper to taste

1 Tbspsesame oil

2 mdonions, sliced in thin wedges

2-3 Tbspcanola oil
How To Make ginger chicken

1Place cubed chicken, grated ginger, soy sauce, salt and pepper in a bowl and leave it for a while

2Slice onion into wedges. Heat canola oil in frying pan. Add onions and chicken and "frizzle" with the lid on, stirring until chicken is done.

3Drizzle with sesame oil and serve with white rice. When you start feeling hungry EAT.
