How To Make ginger chicken simmered in caramel sauce

To make the caramel sauce, add the sugar and 1/4 cup of water to a heavy bottomed saucepan. Place over medium low heat. Stir until the sugar melts. Stop stirring and let cook, undisturbed, for about 20 minutes until the color changes to a deep copper color. Remove from heat, place in the sink, and add the remaining 1/2 cup of water. The mixture will seize up but then dissolve into a caramel sauce. Set aside to cool.
