Ingredients For ginger chicken

6scallions cut into 2 inch lengths white and green parts separated

5 clovegarlic sliced in half

6 sliceginger 1/4 inch cuts

1 Tbspvegetable oil

1 lbboneless skinless chicken cut into chunks

2shallots chopped
-
1/4 cshaoxing wine
-
1 1/2 cchicken stock
-
3 Tbspbrown sugar
-
2 Tbspsoy sauce
-
1 tspdark soy sauce
-
1/2 tspwhite pepper
-
1 Tbspoyster sauce

1 Tbspcornstarch mixed with 1 tbsp water
How To Make ginger chicken

1With a cleaver lightly smash the white parts of the scallions, the garlic and ginger. Add oil to a wok or large skillet. Add the ginger and cook 15 seconds. Add the chicken pieces and brown for about 1 minute.

2Add the garlic, shallots, and white parts of the scallions. Cook 1 minute. Add the wine and let most evaporate.

3Add the chicken stock, brown sugar, soy sauce, dark soy sauce, white pepper and oyster sauce. Bring to a boil and cook for about 5 minutes. Mix the cornstarch and water and stir into the wok to thicken the sauce.

4Mix in the dark green parts of the scallions and remove from heat. Serve immediately
