This can be made with shimp. chicken, or pork. My friend V. muddled through the cilantro AGAIN but she loved the dish so it's all good.

Ingredients For gayle's thai peanut noodles

1 lbshrimp, peeled and deveined or chicken cubed or pork cubed.

1 citalian dressing
-
2 Tbsppeanut butter
-
1 Tbspsoy sauce
-
1 Tbsphoney
-
1 tspground ginger
-
1/2 tspred pepper flakes
-
1 lgshredded carrot
-
1 cgreen onion
-
1 Tbspsesame oil
-
8 ozangel hair pasta
-
2 Tbspcilantro, fresh

2/3 cdry roasted peanuts (*optional but great textural addition)

1 Tbspsriracha chili paste (*optional but it really makes the dish, consider cutting the amount if you like spicy but not too spicy)
How To Make gayle's thai peanut noodles

1whisk (I use a tupperware shaker for this step but it needs to mix well) remaining Italian dressing, peanut butter, soy sauce, honey, ginger and red pepper flakes until smooth.

2Start a large pot of water to boil pasta

3Coat shrimp with 1/2 the italian dressing and set aside for 30 minutes

4Saute carrot, onion and meat in the sesame oil until meat is done (about 5 minutes)

5pasta should be done about now too, drain well and toss the pasta in a large bowl with peanut sauce, meat mixture and chili paste, sprinkle with cilantro and peanuts and enjoy!
