Ingredients For garlicky tortellini, spinach & tomato soup

2 Tbspbutter, unsalted

8 clovegarlic, minced

1 qtchicken broth

6 oztortellini, cheese stuffed

1 cantomatoes, diced, undrained

10 ozspinach, frozen, thawed & sqeezed dry

10basil, fresh, chopped
-
parmigiano-reggiano, grated
How To Make garlicky tortellini, spinach & tomato soup

1Melt the butter in a large saucepan over medium-high heat. Add the garlic & saute until fragrant, about 2 minutes. Add the broth & bring to a boil.

2Add the tortellini & cook halfway, about 5 minutes for frozen pasta, less if using fresh.

3Add the tomatoes & their liquid, reduce the heat to a simmer & cook just until the pasta is tender.

4Stir in the spinach & basil & cook until wilted, 1 - 2 minutes. Serve sprinkled with the grated cheese.
