Ingredients For frito chili pie - lite

1 tspsalt and pepper

1 1/2 lbground chicken breast (your butcher can do this)

3/4 ccelery chopped fine

1/2 conion chopped fine

1/2 ccarrot chopped fine

1/2bell pepper chopped fine

3 clovegarlic chopped fine

1 smsweet potato peeled and chopped fine

1 cantomatoes and chiles
-
1 cantomato sauce
-
1 canchopped green chili
-
2 canchili beans mild sauce
-
2 canpinto beans drained
-
6 ozbeer
-
1 Tbspground cumin
-
1 Tbspchili spice blend. your favorite

1bag of low sodium fritos

1bag of lowfat shredded cheddar
-
optional for toppings - sour cream, chopped pickled jalapeno, chopped onion
How To Make frito chili pie - lite

1For the veggies and garlic I like mine chopped finely. I used my hand held chopper for that but you can use a food processor (just pulse so the mixture doesn't become mush)

2In a pan heat 1 tbs of olive oil and brown the chicken. Add the salt and pepper. Once cooked through add the fresh veggies/garlic and cook for another 5 minutes on med. heat. You want to soften the veggies a little.

3Add your meat/veggie mixture to a stock pot. Turn on heat to med.-high. Add the rest of the ingredients. Up to spices. Stir well to combine. Bring up to a boil then reduce to simmer. Cover and cook for 2 hours. Stir every thirty minutes.

4Spoon into bowls and top with a handful of fritos and cheese. Optional - can top with sourcream, chopped pickled jalapeno, chopped onion, and cilantro. Enjoy
