Ingredients For fried shrimp with pineapple

  • 1 cup
    all purpose flour, sifted
  • 1 tsp
    baking powder
  • 1 tsp
    salt
  • 1
    egg, beaten
  • 1/2 cup
    beer, your choice of oil for frying
  • 1 lb.
    raw shrimp, shelled and deveined, frozen shrimp is fine,
  • 1 tbs
    each cornstarch & sugar
  • 4 tbs
    vinegar
  • 1/2 cup
    pineapple juice
  • 1 cup
    pineapple chunks, drained

How To Make fried shrimp with pineapple

    Sift flour, baking powder, and 1/2 teaspoon salt into bowl. Beat in egg and beer. Heat oil in deep fryer or deep skillet to medium high.

    Dip shrimp in batter, coating well on all sides. Fry in hot oil until nicely browned. Drain. Keep warm.

    Mix cornstarch with sugar, 1/2 teaspoon salt, and vinegar. Add pineapple juice, cook over low heat, stirring constantly, until thickened.

    Arrange shrimp on serving platter. Place pineapple chunks around shrimp, pour sauce over all.
