I actually make this with Wymans frozen wild blueberrie, but using fresh is fine. I only use the wild blueberries because they're higher in antioxidants. Either way, this chicken is awesome

Ingredients For fresh blueberry sauced chicken

  • 4
    boneless, skinlesss chicken breasts
  • 1 Tbsp
    olive oil, extra virgin
  • 1/2 c
    low-sugar apricot preserves
  • 3 Tbsp
    dijon mustard
  • 1/3 c
    cider vinegar
  • 1/2 c
    fresh blueberries
  • 1 c
    hot cooked rice

How To Make fresh blueberry sauced chicken

    In skillet, over medium heat, cook chicken in oil for 4 min each side, or until browned. In bowl, combine preserves and mustard. Spoon over chicken. Reduce heat. Cover, simmer 15 min. Using a slotted spoon, remove chicken and keep warm. Add vinegar to pan. Bring to boil, reduce heat, simmer, uncovered 3 mins. Stir in blueberries. Stir. Serve chicken over rice, spoon sauce over chicken.
