I had my sisters over for dinner Saturday night and I made this dish. I changed it up a bit from the original recipe. I give it 5 ***** for great taste and so easy to whip in a hurry.

Ingredients For four-cheese chicken florentine

  • 4
    chicken breast halves, skinless and boneless
  • 1 pkg
    mostaccioli, uncooked
  • 3 clove
    garlic, minced
  • 2 Tbsp
    olive oil, extra virgin
  • 1
    bag, fresh spinach
  • 4 oz
    cream cheese
  • 1 c
    cottage cheese
  • 1/2 c
    parmesan cheese
  • 2 c
    mozzarella cheese

How To Make four-cheese chicken florentine

    Cook noodles according to package directions. Cut chicken in small pieces. Stir fry in olive oil and minced garlic till no longer pink. Add bag of spinach. Allow spinach to wilt. Add in cream cheese, cottage cheese, Parmesan cheese, add salt and pepper to season. When noodles are done, drain. Toss meat mixture in with noddles. Pour in 9x 13in baking dish and top with mozzarella cheese. Bake at 375F for 25 minutes or until cheese is melted and browned a bit on top.
