Ingredients For forty - clove chicken

  • 1
    ( 3 pounds) frying chicken, or 4 -6 skin on chicken breasts
  • 40 clove
    fresh garlic, peeled and left whole
  • 1/2 c
    dry white wine
  • 1/4 c
    dry vermouth
  • 1/4 c
    olive oil
  • 4
    ribs celery, thickly sliced
  • 2 Tbsp
    finely chopped parsley
  • 2 tsp
    dried basil
  • 1 tsp
    dried oregano
  • pinch of crushed red pepper
  • 1
    lemon
  • salt and pepper to taste

How To Make forty - clove chicken

    Preheat oven to 375 F. Place chicken pieces, skin side up, in a single layer in shallow baking pan. Combine garlic, wine, vermouth, oil, celery, parsley, basil, oregano, and red pepper in medium sized bowl; mix thoroughly. Sprinkle garlic mixture over chicken pieces.

    Remove peel from lemon in thin strips; place peel throughout pan. Season with salt and pepper. Cover pan with foil. Bake 40 - 45 minutes. Remove foil and bake another 15 minutes.
