This is for Sherri's Family and Friends Sandwich challenge. Nothing says Family Fun like sitting around the Fireplace and watching Football on a Sunday afternoon. Hope you all enjoy this as much as we did. The family pronounced it "Better Than Panera"!

Ingredients For fireside focaccia sammie margarita

  • 2
    focaccia bread pieces, split for sandwich
  • 4 Tbsp
    french dressing (see note below)
  • 4 oz
    fowl, roasted and sliced (chicken or turkey)
  • 2 slice
    fresh mozzarella cheese (or packaged if that's all you have)
  • 1
    fantastically large roma tomata, thinly sliced
  • 1/2 c
    fresh basil leaves
  • 1 tsp
    fine italian herbs, salt, and pepper
  • 1 Tbsp
    first press olive oil (extra virgin)
  • NOTE:
  • to make feliciano french dressing, stir together olive oil, red wine vinegar, paprika, 1/2 tsp sugar, and herbs de provence. add salt and pepper to taste. this is *not* the orange-colored, bottled french dressing.

How To Make fireside focaccia sammie margarita

  • 1
    Split Focaccia loaves in half to make upper and lower sandwich portions. Brush inside of each half with French dressing.

    Layer cheese, chicken, and tomato on bottom half of bread. Sprinkle with fine Italian herbs, salt, and pepper. Top with basil leaves.

    Place top bread on top and brush with olive oil. Preheat Panini press or heavy skillet. Grill sandwich in Panini press until toasty marks appear. If you don’t have a Panini press, grill in skillet on one side, then carefully flip over to grill other side.
