This seasoning gives a characteristic and distinctive Caribbean flavor to chicken. Rub the seasoning well into all the pieces of chicken, or both inside and out of a whole chicken, before roasting. Ingredients For feliciano adobo seasoning

  • FOR EACH 2 1/2 POUNDS OF CHICKEN:
  • 3
    whole black peppercorns
  • 2 clove
    garlic, peeled
  • 1 1/4 tsp
    whole dried oregano
  • 2 1/2 tsp
    salt
  • 1 1/2 tsp
    olive oil
  • 1/2 tsp
    vinegar or lime juice

    Crush peppercorns, garlic cloves, oregano and salt in a mortar and pestle. Mix in the olive oil and vinegar or lime juice until all is well combined. Rub chicken with the seasoning before cooking.
