    carrots - raw, 3 carrot (7-1/2
  • 2 md
    yellow summer squash, 2 medium, cut into big bite size leave skin on, wash well.

    onions - raw, 1 cup, chopped
  • 1 md
    green bell pepper, 1 med
  • 2 Tbsp
    olive oil for stir frying
  • 1 pinch
    salt, pepper, onion powder,garlic powder, ginger.

    WASH AND CUT CHICKEN INTO BITE SIZES, MIX IN SEASONINGS AND LET SET. WASH AND CUT ALL VEGGIES. PUT A SMALL AMOUNT OF OLIVE OIL IN LARGE SKILLET, MOVE AROUND UNTIL THE BOTTOM HAS OIL ALL OVER IT, HOT, THROW IN CHICKEN. STIR AROUND UNTIL ALMOST FULLY COOKED.THROW IN BROCCOLI, AND CARROTS,STIR FRY UNTIL ALMOST TENDERED. THROW IN ONION AND BELL PEPPERS. COOK UNTIL ALL IS TENDERED. TURN OFF HEAT AND SPRINKLE WITH ABOUT 1/3 CUP SHREDDED CHEDDAR CHEESE DIVIDE INTO EVEN AMOUNT i GET 4 SERVINGS OUT OF MINE.
