Use the best ingredients you can find at the farmer's markets, and your favorite rotisserie chicken, or leftover chicken. This salad is excellent on a hot day when you don't want to heat up the kitchen. I lightly steam all the cooked veg in the microwave. Great served with a loaf of excellent crusty bread and a pitcher of sangria!

Ingredients For farmer's market salad

1 lgromaine lettuce head, trimmed and washed

1 lgred leaf lettuce head, trimmed and washed

1 ccooked fresh corn, cut off the cob

4 mdred or fingerling potatoes, cooked, cubed

2 ccooked green beans, trimmed and cut

1 1/2 cfresh heirloom cherry tomatoes, halved

1 csliced fresh cucumbers

1 csliced fresh red bell pepper

2 ccooked rotisserie chicken, cubed

3/4 cfeta cheese, crumbled
How To Make farmer's market salad

1Layer all ingredients, beginning with lettuce, in serving bowl. Top with croutons, preferably homemade, and serve dressing on the side. For dressing, combine 1 clove garlic, 1/4 white wine vinegar, 2 TB honey, 1/2 cup olive oil, in blender and emulsify. Add fresh chopped basil, parsley, salt, and pepper to taste.
