Use the best ingredients you can find at the farmer's markets, and your favorite rotisserie chicken, or leftover chicken. This salad is excellent on a hot day when you don't want to heat up the kitchen. I lightly steam all the cooked veg in the microwave. Great served with a loaf of excellent crusty bread and a pitcher of sangria!

Ingredients For farmer's market salad

  • 1 lg
    romaine lettuce head, trimmed and washed
  • 1 lg
    red leaf lettuce head, trimmed and washed
  • 1 c
    cooked fresh corn, cut off the cob
  • 4 md
    red or fingerling potatoes, cooked, cubed
  • 2 c
    cooked green beans, trimmed and cut
  • 1 1/2 c
    fresh heirloom cherry tomatoes, halved
  • 1 c
    sliced fresh cucumbers
  • 1 c
    sliced fresh red bell pepper
  • 2 c
    cooked rotisserie chicken, cubed
  • 3/4 c
    feta cheese, crumbled

How To Make farmer's market salad

  • 1
    Layer all ingredients, beginning with lettuce, in serving bowl. Top with croutons, preferably homemade, and serve dressing on the side. For dressing, combine 1 clove garlic, 1/4 white wine vinegar, 2 TB honey, 1/2 cup olive oil, in blender and emulsify. Add fresh chopped basil, parsley, salt, and pepper to taste.
