I had been thinking of stir fry and then I thought of chicken fried rice--my favorite thing in Asian cuisine. I had all the ingredients I needed so I threw this recipe together. It is marvelous! I'm going back for seconds! 09-08-15

Ingredients For ellen's chicken fried rice

  • 1 Tbsp
    cooking oil
  • 2
    chicken breasts, boneless and skinless, cut into bite-size pieces
  • 1½ c
    peas and carrots, frozen
  • 1 md
    onion, chopped
  • 3 or 4 clove
    garlic, minced
  • 2
    eggs, beaten
  • ½ c
    low-sodium soy sauce
  • 4 c
    cooked rice

How To Make ellen's chicken fried rice

    Cook the rice according to package directions; drain, set aside.

    Brown the chicken pieces in hot oil in large skillet over medium heat. After two or three minutes, add onion. Stir frequently.

    When onion becomes translucent, add garlic and peas and carrots. Stir to mix. Add rice, eggs, and soy sauce. Mix thoroughly and let simmer over low heat until heated through.

    If needed, add more soy sauce for desired consistency. Serve immediately.
