Ingredients For easy one skillet chicken alfredo lc/keto

  • SPAGHETTI SQUASH
  • 1 md
    spaghetti squash
  • 2 tsp
    olive oil
  • 1/2 tsp
    salt
  • 1/4 tsp
    black pepper
  • 1/2 tsp
    garlic powder or 1 clove garlic, minced
  • CHICKEN
  • 3 Tbsp
    olive oil
  • 2 lg
    chicken breasts, sliced into stips
  • 2 clove
    garlic, minced
  • 1/2 tsp
    black pepper
  • 1 tsp
    salt
  • ALFREDO SAUCE
  • 4 oz
    cream cheese, cubed
  • 1/2 c
    heavy cream
  • 1/4 c
    grated Parmesan cheese
  • 1 tsp
    dried Italian seasoning
  • 1 tsp
    dried parsely

How To Make easy one skillet chicken alfredo lc/keto

  • De-seeding the spaghetti squash.

    Preheat oven to 350 degrees. Cut spaghetti squash in half lengthwise and scoop out seeds and membrane with a spoon and discard.
  • Seasoning and olive oil sprinkled over the spaghetti squash.

    Drizzle olive oil over insides of squash and sprinkle with salt, pepper and garlic. Turn cut-side down on cookie sheet and bake 35-45 minutes, until outside is starting to get soft to the touch.

    While squash is cooking, in a large skillet, drizzle olive oil. Add chicken strips, salt, pepper, and garlic. Cook over medium-high heat until chicken is done.
  • Alfredo sauce ingredients added to the bowl.

    Add cream cheese cubes to pan and stir until melted. Add heavy cream, turning heat to medium-low, and then Parmesan cheese. Add Italian seasoning and parsley and cook on low about 5 additional minutes.

    Scoop out spaghetti squash onto 4 plates. Serve with chicken and sauce over top.
