This is a basic curry. You can add your own spin by adding more spice or less sugar. It's just so good.

Ingredients For easy indian chicken curry

3 Tbspvegetable oil

1 lgsweet onion sliced

1 tspsugar

2 lgtomatoes diced

2 Tbspgarlic paste
-
1 Tbspginger paste
-
2 tspeach coriander powder and garam masala powder

1 tspground cumin
-
1/2 tspeach red chili powder & turmeric

1/4 cbrown sugar
-
3boneless skinless chicken thighs cut into bite size pieces

1 chot water
-
2 Tbspfresh cilantro chopped
-
basmati rice & naan for serving
How To Make easy indian chicken curry

1Add oil to a large skillet. Add the onions and sugar and cook until caramelized. Remove the onions with a slotted spoon and let drain on paper towels. leave the oil in the pan.

2Add the onions to a food processor and process into a paste. Remove and set aside. Add the tomatoes to the food processor with the ginger and garlic paste. Process until well mixed.

3Add the spices & brown sugar to the tomatoes. Add the onion paste back to the skillet and stir fry over medium high heat for 3 minutes. Add the tomato mixture and cook 2 or 3 minutes until the oil begins to separate. Add the chicken pieces and the hot water.

4Simmer for about 15 minutes. Top with fresh cilantro. Serve with basmati rice and naan
