2boneless, skinless chicken breasts cut into strips

2 Tbspextra virgin olive oil

1 pkgsaltine crackers, crushed

2eggs, beaten
How To Make easy crunchy chicken fingers

1Beat the eggs in a small bowl and set aside. Place the crushed crackers into another bowl

2Heat the oil in a large heavy skillet over medium heat.

3Carefully dip each chicken strip into the eggs and then into the crushed cracker crumbs. Be sure to coat well on both sides.

4Place the coated chicken strips into the hot oil.

5Turn chicken occasionally to insure browning on both sides. Cook about 20-30 minutes or until fork-tender.

6Drain on paper towels and serve.
