    boneless, skinless chicken breasts cut into strips
  • 2 Tbsp
    extra virgin olive oil
  • 1 pkg
    saltine crackers, crushed

    eggs, beaten

How To Make easy crunchy chicken fingers

  • Chicken strips ready to be dipped and coated.

    Beat the eggs in a small bowl and set aside. Place the crushed crackers into another bowl
  • Heating the oil.

    Heat the oil in a large heavy skillet over medium heat.
  • Chicken strips have been dipped in egg and coated with crackers--ready to cook.

    Carefully dip each chicken strip into the eggs and then into the crushed cracker crumbs. Be sure to coat well on both sides.
  • Cooking the chicken strips

    Place the coated chicken strips into the hot oil.

    Turn chicken occasionally to insure browning on both sides. Cook about 20-30 minutes or until fork-tender.
