I love fall weather – and I love comfort food. This easy main dish is perfect for cool evenings and is so easy, you will make it a regular dish at your home too! Don't have time to cook the chicken? Just use 2 cans of drained, white meat chicken instead, when in a hurry! I serve it with cheesy-Jalapeno cornbread. Oh yeah….that’s what I’m talkin’ about!

Ingredients For easy chicken chili

  • 1 lb
    cooked chicken in bite size pieces...use leftovers if you like.
  • 1 can
    (28 oz) diced tomatoes, juice and all.
  • 1 can
    (15 oz) black beans, drained and rinsed.
  • 1 can
    (15 oz) navy beans, drained and rinsed.
  • 1-2 c
    your favorite sweet bbq sauce
  • 1 md
    onion, chopped and microwaved in a bit of butter 'til translucent.
  • 1 can
    mexicorn, drained
  • 1/2 tsp
    crushed red pepper flakes
  • 2 tsp
    sugar
  • 1 tsp
    chili powder
  • 1 tsp
    ground cumin
  • 1/4 tsp
    salt

How To Make easy chicken chili

  • 1
    MIX all ingredients in large saucepan. BRING to boil on medium-high heat. Reduce heat to low; simmer 10 min. or until heated through, stirring occasionally.
