Something I just threw together on a whim. It turned out pretty great, so I thought I'd share.

Blue Ribbon Recipe

A super simple chicken dinner to throw together that your entire family will love. The cream of chicken and potato soups provides a thick and creamy base. We loved the small chunks of potatoes. The chicken is tender, and adding the mixed veggies makes this an all-in-one meal with minimal pots and pans. On top, the biscuits bake to flaky perfection. Your family is going to devour this pantry-friendly dinner.

Ingredients For easy chicken and biscuit dinner

  • 3
    chicken breasts
  • 1 can
    cream of potato soup (10.5 oz)
  • 1 can
    cream of chicken soup (10.5 oz)
  • 1 box
    frozen veggies of choice (about 1 1/2 cups)
  • 1/2 tsp
    black pepper
  • 1 tsp
    seasoning (poultry or other)
  • 1/2 c
    shredded cheese
  • 1 pkg
    Pillsbury biscuits

Test Kitchen Tips
We baked ours in an 8-inch cast iron skillet.
  • Chicken breasts cut into cubes.

    Preheat the oven to 400 degrees F. Cut the chicken breast into 1" cubes.
  • Ingredients, except biscuits, in a bowl.

    Mix together all the ingredients except the biscuits.
  • Chicken poured into a cast iron skillet.

    Pour the mixture into a Dutch oven, cast iron skillet, or casserole dish.
  • Baking the chicken mixture.

    Bake for 45 minutes.
  • Biscuits on top of the chicken mixture.

    Drop the temperature down to 350 degrees F. Add the biscuits to the top of the meal.
  • Easy Chicken & Biscuit Dinner with golden brown biscuit on top.

    Bake another 15 - 20 minutes, or until the rolls are golden brown. Serve hot.
