I buy fresh veggies from a farm 20 minutes from home and at certain crop seasons, I purchase fresh asparagus. This recipe is so healthy and yum!

Ingredients For diana's asparagus spaghetti

  • 1/2 lb
    fresh market asparagus, washed and chopped in 1/2" pieces
  • 6 oz
    chicken breast filet, sliced
  • 2 Tbsp
    greek olive oil
  • 1 Tbsp
    minced garlic
  • 1 Tbsp
    coarse sea salt
  • 2 dash
    black pepper
  • 1/2 tsp
    basil, dried
  • 1/4 c
    kalamata (greek) olives
  • 1/4 pkg
    chinese rice noodles
  • 1-2 Tbsp
    parmesan cheese

How To Make diana's asparagus spaghetti

    Sauté Asparagus in pan with 1T olive oil only until crisp, about 5 minutes. Add spices.

    Add chicken and 1T olive oil to pan and sauté 10-15 minutes on medium heat until tender and slightly browned.

    While chicken is sautéing, Cook rice noodles in mircowave for 6-9 minutes according to pkg. Drain.

    Add olives and heat on low, before the chicken is done.

    Place sauce on top of the bed of noodles on dinner plate and sprinkle with Parmesan cheese. Serve immediately.
