I served this with rice and fresh green beans. It would also be good with Mashed potatoes. My husband loved it.

Ingredients For divine chicken breasts -n- mushrooms

  • CHICKEN
  • 3
    boneless and skinless chicken breasts
  • 3 Tbsp
    butter
  • 1 tsp
    dried parsley
  • 1 tsp
    dried tarragon
  • sprinkle
    lawry's seasoning salt
  • sprinkle
    pepper
  • sprinkle
    poultry seasoning (i use best choice)
  • MUSHROOM SAUCE
  • 2 Tbsp
    butter
  • 8 oz
    fresh sliced mushrooms
  • 1 sm
    onion chopped
  • 1 pkg
    better than gravy mix - chicken
  • 1/2 c
    white cooking wine (i use reese vintage cooking wine)
  • 1/2 c
    half and half

How To Make divine chicken breasts -n- mushrooms

    Preheat oven to 350 degrees. Spray a 9 X 13 pan with Olive oil spray. Rinse and cut chicken into servable portions. Put chicken in a zip lock bag and pound down to even height pieces. (Not too flat)

    In a large skillet, over medium heat, add Butter, Parsley and Tarragon and cook chicken 5 minutes each side. Arrange chicken in prepared pan. Sprinkle with Lawry's, pepper and Poultry seasoning to your liking.

    For sauce: Sauté mushrooms and onions in same pan used for chicken. Do not wash. Add 2 Tablespoons butter and cook until done.

    Whisk together in a large measuring cup, Better than Gravy packet with the Reese white cooking wine and then add the half and half. Microwave on high 30 seconds, stir, and microwave another 30 seconds. Add to mushrooms and onions in large skillet. Cook on low to medium until thickened. Pour over chicken and bake for 25 to 30 minutes.
