This is one delicious bird...and easy to boot...you could serve with mashed taters, as it makes a wonderful gravy...enjoy doing something else, while the crock pot does the work. The broth this bird makes is delicious drizzled over the chicken when serving...Yummilicious!!! My photos

Ingredients For deliciously seasoned chicken / crock pot

  • 4 lb
    roasting chicken
  • SEASONING
  • 1 Tbsp
    salt
  • 2 tsp
    paprika
  • 1 1/2 tsp
    onion powder
  • 1 1/2 tsp
    garlic powder
  • 1 1/2 tsp
    dried basil
  • 1 tsp
    dried mustard
  • 1 tsp
    cumin
  • 2 tsp
    pepper
  • 1 tsp
    poultry seasoning
  • FILLING FOR BIRD
  • 2 Tbsp
    butter
  • 2 c
    onion - chopped
  • 1 c
    red bell pepper - chopped
  • 4 clove
    garlic, crushed
  • GRAVY - ( OPTIONAL )
  • 2 c
    chicken broth
  • 1/4 c
    flour

How To Make deliciously seasoned chicken / crock pot

    Combine seasoning mix ingredients in a small bowl.

    Melt butter over medium heat in a skillet. Add onion, red pepper and 3 tablespoons of the seasoning mix. Cook until the onions are golden brown, add garlic the last few minutes of cooking - approximately 20 minutes in total. Cool slightly.

    Rinse chicken under cold water and remove any giblets that are in the cavity, pat dry with a paper towel.

    Sprinkle the outside of the chicken with the remainder of the seasoning mix.

    Stuff vegetable mixture into the cavity of a chicken.

    Place chicken into the slow cooker. Cover and cook on low for 6 hours. I love to drizzle the delicious broth over the chicken...absolutely delicious!

    Empty the vegetable stuffing from the cavity and pour juices from the bottom of the slow cooker into a medium saucepan. With the heat on medium high, whisk in flour and 1 cup of stock. Stir continuously until thickened and starts to bubble. Add more stock if you prefer a thinner gravy. Serve over mashed potatoes.
