Pure awesomeness! My family gobbled these delicious patties right up, and were looking for more. These could also be served as an appetizer.

Ingredients For ~ dandy deviled chicken patties ~

3 cpoached, boneless skinless chicken breast - chopped - about 3 breasts

2 1/2 Tbspbutter

4green onion, sliced - ends as well
-
3/4 cminced, red bell pepper
-
1 clovesmashed garlic, minced
-
1 Tbspwhole grain dijon mustard
-
2 tspcreole seasoning
-
3 Tbspmayonnaise
-
1 1/2 cfresh bread crumbs
-
1egg, slightly beaten
-
4 Tbspvegetable oil
- SAUCE
-
1/2 cmayonnaise
-
2green onion, minced
-
1 clovegarlic, smashed and finely minced
-
1 Tbspwhole grain dijon mustard
-
1/2 Tbspparsley paste
-
1/4 tspred pepper
How To Make ~ dandy deviled chicken patties ~

1Sauce:
Mix all sauce ingredients until well blended. Chill until patties are done. -
2In a small skillet over med heat, melt butter and saute onion, garlic and pepper until tender.

3In a med - large bowl, add the chopped chicken. Stir in the cooked vegetables. To this, mix in the egg, mayonnaise, creole seasoning, bread crumbs, mustard. Mix well.

4In a large skillet over med heat, add oil and heat.
Make patties by squeezing together with palms of hand. Carefully lay them in the hot oil. Cook for 3 - 4 minutes or until golden, then carefully turn to other side. Cook another 3 - 4 min. Drain on paper towels. -
5Serve hot with or without sauce. The sauce is great with them though.
