dancing chicken with sour cream mushroom sauce

This recipe is a favorite and is simple...I used to fixed it when the kids were growing up, I have had to down scale it a bit for us now...We serve it with Brown Rice and thyme this has a wonderful flavor....and a salad

Ingredients For dancing chicken with sour cream mushroom sauce
- MEAT

5 mdchicken breasts, boneless and skinless

1 1/2 cflour

1 1/2 tspsalt

1 1/2 tsppepper
-
1/2 tspgarlic
-
1/2 colive oil
- SOUR CREAM MUSHROOM SAUCE

1 lgmushroom soup
-
1 tspgarlic
-
2 pinchrosemary, dried
-
1/2 csour cream
-
1/8 ccream, sherry
-
salt and pepper to taste
- RICE
-
4 cbrown rice, cooked
-
2 tspthyme, dried
How To Make dancing chicken with sour cream mushroom sauce

1In large skillet heat olive oil on to medium heat..... Mix all dry ingredients for the meat into a shallow bowl..wash Chicken....Dredge slightly damp chicken in to flour mixture and place into hot oil...brown on both sides, dredge chicken once more in flour mixture and place back into skillet...browning once more....set aside

2In mixing bowl mix all sour cream mushroom sauce ingredients together with a whisk.....

3Put skillet back on the stove under medium heat, pour the sour cream mushroom sauce over the top of the chicken and place lid on top turn heat down to simmer and simmer for 30 minutes...

4Brown rice, you can use the boil n bags (3) of them 10 minutes in the micro wave, or dry long grain rice = 4 cups after it is cooked...stir in 2 tsp of thyme....

5Prepare dish: place rice on plate and chicken on the rice while spooning some of the sauce over the top of the chicken and rice...serve hot with a salad and there you go....ENJOY
