My dad used to make this dish ALL the time when we were growing up. He would make this and serve it with baked potatoes and he would take some of the juice from the chicken pan and pour it over his baked potato and then add sour cream, it was amazing! It's crazy the things we miss when our loved ones are gone! I hope you enjoy this easy dinner as much as I did as a child and now my family does also!! Enjoy!

Ingredients For dad's salsa chicken

  • 3 lb
    chicken legs,thighs or what ever chicken you'd like
  • 1 jar
    large jar of salsa of you're choice
  • 1/2 jar
    salsa jar of water
  • oil

How To Make dad's salsa chicken

    Pre-Heat oven to 350* Add oil to the skillet and sear the chicken to lock in juices (8-10) mins.

    remove from heat and place chicken into a greased pan. Place salsa on top of chicken, then add water to the salsa jar and pour around the chicken in the pan.

    Cover with tin foil and bake for 45-55 mins and check to make sure it's cooked all the way. We serve ours with baked potatoes and sour cream, can garnish with fresh Cilantro. Enjoy!!!!!!
