2 Tbspvegetable oil

1 lgonion, sliced

2 Tbspcurry powder

8chicken thighs, skinless and boneless

1 can398ml coconut milk
-
2 lgcarrots sliced into coins

2 lgsweet potatoes, cut into chunks

1 mdsweet green pepper cut into slices

1 cfrozen peas
-
1/2 cchopped cilantro

3 ccooked rice cooked according to package directions
How To Make curry chicken on rice

1Heata large wide frying pan over medium-high heat add oil then onion and curry powder, cook until onion starts to soften, sprinkle chicken with salt and pepper and add to pan and saute til chicken takes on a golden color.

2Add coconut milk, carrots, potatoes and pepper, and bring to a boil, lower heat, cover and cook until vegetables are tender about 15 to 20 minutes.

3Remove lid and continue cooking until liquid is slightly thickened about 5 minutes,stir in peas and cilantro...serve over cooked rice.
