Ingredients For curried chicken with fruit and rice

    onions, chopped
  • 3 Tbsp
    coconut oil (or your choice)
  • 1 1/2 c
    long grain rice
  • 1
    apple - peeled, cored, and grated
  • 3/4 c
    golden raisins
  • 1 Tbsp
    brown sugar
  • 2 tsp
    curry powder
  • 21 ounces chicken broth
  • 1 Tbsp
    lemon juice
  • salt to taste
  • 3 c
    cooked chicken or turkey, cut into bite-sized pieces
  • 1/2 c
    toasted slivered almonds

How To Make curried chicken with fruit and rice

    In a dutch oven, cook onion in oil until soft and translucent. Add the rice and cook for 3 minutes, stirring constantly.

    Add remaining ingredients (except almonds) and combine well.

    Cover and let the casserole simmer until the rice is cooked tender and the liquid is absorbed. Serve with your favorite condiments such as chutney.
