3 Tbspcoconut oil (or your choice)

1 1/2 clong grain rice

1apple - peeled, cored, and grated

3/4 cgolden raisins

1 Tbspbrown sugar

2 tspcurry powder

21 ounces chicken broth

1 Tbsplemon juice

salt to taste

3 ccooked chicken or turkey, cut into bite-sized pieces

1/2 ctoasted slivered almonds
How To Make curried chicken with fruit and rice

1In a dutch oven, cook onion in oil until soft and translucent. Add the rice and cook for 3 minutes, stirring constantly.

2Add remaining ingredients (except almonds) and combine well.

3Cover and let the casserole simmer until the rice is cooked tender and the liquid is absorbed. Serve with your favorite condiments such as chutney.
