This came from the necessity to use up some leftover chicken! I don't b really like plain, old chicken salad-but I love curry and Waldorf salad! You can use any grapes you have in the house, and any color raisin will do. I wouldn't recommend a Granny Smith apple, you need the sweetness in the salad. This is a little healthier too-mostly nonfat Greek yogurt and a little low fat mayo!

Ingredients For curried chicken waldorf salad

  • SALAD
  • 1
    medium apple, unpeeled, chopped
  • juice of 1 lemon (about 2t.)
  • 2 c
    diced, cooked chicken
  • 1 c
    seedless grapes, halved
  • 1
    celery stalk, finely chopped
  • 1/4 c
    raisins
  • 1/2 c
    toasted, slivered almonds
  • DRESSING
  • 3/4 c
    nonfat greek yogurt
  • 1/4 c
    reduced fat mayonnaise
  • 1 1/2 tsp
    curry powder
  • 1/2 tsp
    garam masala (available in indian groceries) if you can't get it you can add another 1/2 t. curry powder
  • 1/4 tsp
    salt (i use kosher salt)

How To Make curried chicken waldorf salad

  • 1
    Put all the salad ingredients in a large bowl except the apple. Toss the apple with the lemon juice and add to the salad. Mix well.

    In a smaller bowl combine yogurt, mayonnaise, curry powder, garam masala (if using) and salt. Combine with the salad and refrigerate. Serve over a bed of lettuce.
