Ingredients For curried chicken salad

1 smonion

4chicken breasts, boneless and skinless halves

2 tspcurry powder
-
1/4 tspgarlic salt
-
1/2 corange juice
-
1mandarin oranges 15 oz can drained well

4scallions chopped finely
-
1 cgolden raisins
-
2 Tbspsweeten flaked coconut,divded

1/4 clight mayonnaise
-
24whole wheat crackers
How To Make curried chicken salad

1set oven for 400.Scatter onion slices on the bottom of medium baking dish .And spinkle with currey and garlic salt.

2Pour orange juce around chicken bake about 30 min,or until cooked through.Cool,then cut into bite size pieces.

3In medium bowl mix together chicken,oranges,scallions,raisins , 1 teaspoon curry powder,and 1 tablspoon of coconut.Stir in mayonnaise.Transfer to serving bowl .

4Top with remaining coconut serve with whole with crackers,serves 8
