Ingredients For curried chicken salad

    onion
  • 4
    chicken breasts, boneless and skinless halves
  • 2 tsp
    curry powder
  • 1/4 tsp
    garlic salt
  • 1/2 c
    orange juice
  • 1
    mandarin oranges 15 oz can drained well
  • 4
    scallions chopped finely
  • 1 c
    golden raisins
  • 2 Tbsp
    sweeten flaked coconut,divded
  • 1/4 c
    light mayonnaise
  • 24
    whole wheat crackers

How To Make curried chicken salad

    set oven for 400.Scatter onion slices on the bottom of medium baking dish .And spinkle with currey and garlic salt.

    Pour orange juce around chicken bake about 30 min,or until cooked through.Cool,then cut into bite size pieces.

    In medium bowl mix together chicken,oranges,scallions,raisins , 1 teaspoon curry powder,and 1 tablspoon of coconut.Stir in mayonnaise.Transfer to serving bowl .

    Top with remaining coconut serve with whole with crackers,serves 8
