Ingredients For curried chicken and peanut salad

1/2 cplain, nonfat yogurt

1/4 clight mayonnaise

1 - 1 1/2 tspcurry powder

1/4 tspsalt

1/8 tsppepper

3 ccooked chicken, chopped

1 cseedless red or green grapes, halved

1/2 cwater chestnuts, chopped

1/2 cchopped celery (chopped red or green bell pepper optional)

lettuce leaves

1/3 cchopped peanuts
How To Make curried chicken and peanut salad

1In a large bowl combine yogurt, mayo, curry powder salt and pepper; mix well.

2Fold in chicken, grapes, water chestnuts, celery and bell pepper (if using). Cover and chill thoroughly.

3To serve, line 6 plates with lettuce leaves. Spoon chicken mixture over lettuce leaves. Top with chopped peanuts.
