Ingredients For curried chicken and peanut salad

  • 1/2 c
    plain, nonfat yogurt
  • 1/4 c
    light mayonnaise
  • 1 - 1 1/2 tsp
    curry powder
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 3 c
    cooked chicken, chopped
  • 1 c
    seedless red or green grapes, halved
  • 1/2 c
    water chestnuts, chopped
  • 1/2 c
    chopped celery (chopped red or green bell pepper optional)
  • lettuce leaves
  • 1/3 c
    chopped peanuts

How To Make curried chicken and peanut salad

    In a large bowl combine yogurt, mayo, curry powder salt and pepper; mix well.

    Fold in chicken, grapes, water chestnuts, celery and bell pepper (if using). Cover and chill thoroughly.

    To serve, line 6 plates with lettuce leaves. Spoon chicken mixture over lettuce leaves. Top with chopped peanuts.
