This is a family favorite and super easy. Plus it is KETO. Have fun with it, switch up your pork rind flavors. Plus this reheats well in our Vortex. We always make a double batch.

Ingredients For crunchy chicken tenders

  • 1/2 c
    pork rinds, crushed
  • 2 lb
    boneless chicken thighs cut into 2” strips
  • 2 lg
    eggs, whisked
  • salt and pepper to taste

How To Make crunchy chicken tenders

    Preheat the oven to 400°F and line a baking sheet with parchment.

    Put crushed pork rinds in a shallow dish or bag to toss
  • 3
    Season the chicken with salt and pepper, then dip in the beaten eggs.

    Dredge the chicken pieces in the pork rinds mixture, then arrange on the baking sheet.

    Bake for 20 minutes until browned and crisp. Serve hot.

    We switch up our pork rind flavors, we love bBQ and Buffalo style best. You can also use plain and add some paprika and chili powder. Just play around with it. We make a double batch, as these heat up well in our vortex for leftovers.
