2 lbchicken breast, seared

1 lgyellow onion

3 lgcarrots, chopped

3 lgceler ribs, chopped

2 Tbsptomato paste

2 Tbspgarlic

2 tsprosemary, dried

32 ozchicken broth or chicken stock

2 Tbspcorn starch

1/3 cwater
How To Make crock pot chicken stew

1In a large skillet, add oil and sear chicken breast until browned. Salt each side . Do not cook thoroughly through.

2Transfer into your Crock Pot or slow cooker. Add carrots, celery, onion, garlic, tomato paste, and herbs.

3Slowly add in the chicken stock or chicken broth. Secure the lid and cook for five hours, stirring halfway through.

4At the end of the process, poke potatoes and or carrots to see if they are soft enough.

5In a separate bowl mix corn starch and water to make a slurry. Add this to the pot and stir to combine. This should thicken the juices from the chicken and vegetables. Add pepper if needed also.

6Serve and enjoy. Serve with biscuits or crusty bread if you want also.
