This wonderful Spanish chicken dish that's very easy to make, and it tastes wonderful. It's great with plain white rice (though I have served it with Spanish Rice, too).

2 lbboneless skinless chicken (thighs or breasts), about 10 pieces

1 smonion, diced

1 clovegarlic, crushed

1bell pepper, chopped (green, red, yellow or orange)

4 lgplum tomatoes
-
2 Tbspalcaparrado or pitted spanish olives

1/2 cwater
-
8 oztomato sauce
-
1/4 tspdried oregano leaves
-
1/4 tspground cumin
-
1/2 tspsalt
-
1-2bay leaves
-
1/4 ccilantro, chopped
-
5 sprigfresh cilantro, for garnish
How To Make crock pot chicken a la criolla

1Place chicken, onion, garlic, pepper, and tomatoes in the crock pot. Season with oregano, cumin and salt. Mix well, so everything is well seasoned.

2Add the tomato sauce and olives, about 1 tablespoon of the olive brine, water, bay leaf, and chopped cilantro. Mix well, and set crock pot to High for 4 hours or on Low for 6 hours.

3When done, taste and adjust seasonings as needed.

4Garnish each serving with fresh cilantro.
