- SEAR CHICKEN 5 MINUTES PER SIDE

2 lbboneless, skinless, chicken breasts (3-4)

1 Tbspbutter
- SAUTE 3 MINUTES

2 clovegarlic, minced

1/4 conion, diced
- SAUTE ANOTHER 2 MINUTES

12 ozjar roasted red peppers, finely chopped
- ADD. SIMMER TO MELT.

1-1//4 cchicken broth
-
4 ozcream cheese, low fat
-
1/4 tspcrushed red pepper
- ADD CHICKEN & BASIL, SALT, PEPPER. SIMMER 2 MINUTES.

1/4 cbasil leaves, chopped

dashsalt & pepper, to taste
How To Make creamy roasted red pepper chicken skillet

1In large skillet, melt butter over medium heat. Add chicken breasts and sear for 5 minutes per side. Remove chicken from skillet and set aside.

2In same skillet, saute the onions and garlic for 3 minutes. Add red peppers and saute another 2 minutes.

3Add the broth, cream cheese, and crushed red pepper. Simmer and stir until cheese is melted in the broth.

4Add chicken back to the skillet to warm. Add basil, salt and pepper. Simmer 2 minutes.

5Serve.
