creamy garlic/spinach chicken

This recipe is so versatile, this is my simple version...you can add in sun-dried tomatoes, mushrooms to make it hardier...serve over rice or noodles.

Ingredients For creamy garlic/spinach chicken

  • 4-6
    chicken breast cutlets
  • 2 Tbsp
    butter
  • 1 tsp
    olive oil
  • 5 clove
    garlic, smashed
  • 1 tsp
    italian seasoning
  • 1 c
    chicken broth
  • 1 c
    milk
  • 1 Tbsp
    cornstarch
  • 2 c
    spinach, fresh chopped
  • salt and pepper

How To Make creamy garlic/spinach chicken

    salt and pepper the cutlets, add 1 tablespoon of the butter and the olive oil in a saute pan.

    Brown cutlets on each side ( about 1 min per side) set aside.

    In same pan after you remove the cutlets, add the garlic, chicken broth, milk & cornstarch ( first mix the milk and cornstarch, to make a slurry) now whisk in slowly it will form a nice light gravy...add chicken back in and top with the spinach...cover and simmer 20 mins...chicken will finish cooking in the delicious sauce.
