This is a dish I threw together with some chicken and broccoli I needed to get used up. The family loved it, I hope you do as well. Enjoy!!

Ingredients For ~ creamy chicken/ broccoli / parmesan pasta ~

  • 8 oz
    linguine pasta
  • 1
    head, fresh broccoli, cut into 4th or halves, depending how big each piece is - removing the hard stems
  • butter
    or oil
  • 1 lb
    chicken tenders - cut into bite sized pieces
  • sprinkle
    chicken with salt, pepper and garlic powder to taste
  • 2 clove
    garlic, minced
  • 1 sm
    onion
  • 3/4 c
    cream
  • 1/4 c
    milk
  • 3/4 tsp
    better than bouillon chicken paste
  • 1 - 14 oz
    cream of chicken soup
  • 1/4 c
    sundried tomatoes, chopped and soaked in warm water for 5 - 10 minutes
  • 3/4 c
    shredded, parmesan

How To Make ~ creamy chicken/ broccoli / parmesan pasta ~

    Place linguine in a 2 quart dutch oven of boiling, salted water. Cook according to box instructions. When there is only a few minutes left to cook, add broccoli.

    In a large skillet, add 3 tablespoons, butter - melt over medium heat and add the chicken, onion and garlic, salt, pepper and garlic powder to taste, stirring occasionally, until chicken is cooked through and onion is tender.

    To the skillet, stir in the soup, bouillon, milk, cream, tomatoes and cheese. Once broccoli and pasta are drained, add them to the skillet, combine and bring to a simmer, to heat through and until the cheese is melted.

    Plate and sprinkle with additional pepper and Parmesan if desired. Enjoy!! My family was pleased.
