This pizza is hands down one of the best pizza's I've ever eaten or made. That's saying a lot as I use to work in a pizza shop growing up and when in NYC, tried many diff pizza's. Easy too as no sauce to fuss with. Please if making, use a home made crust and use a good pesto or make your own. This will make a world of difference. Also, as my aunt used to do at her shop, buy blocks of Mozzarella and shred your own. Just something about the way it melts. I hardly ever buy the pre packaged cheese these days, It doesn't take long to grate it. I do hope you try this awesome pizza. Enjoy, so good

Ingredients For ~ crazy delicious chicken pesto pizza ~

  • 1
    home made crust or store bought dough - this really makes a difference in the final product
  • corn
    meal
  • 1 1/2 Tbsp
    olive oil - divided
  • 10 oz
    boneless skinless chicken breast - cut into bite sized pieces
  • salt
    & pepper
  • 1 md
    red onion, sliced thin - use mandolin if you have one
  • 1/4 c
    good pesto + 4 teaspoons
  • 2 lg
    roma tomatoes. chopped or 1 large tomato
  • 2 Tbsp
    fresh grated parmesan cheese
  • 5 - 6 oz
    fresh grated mozzarella cheese - melts nicer
  • red
    pepper flakes, optional

How To Make ~ crazy delicious chicken pesto pizza ~

    On a pizza pan, I use teflon coated, spread 1/2 tablespoon olive oil with a paper towel, more if needed. Sprinkle evenly with a light coating of corn meal. This makes for a crispy crust. Spread dough evenly in a circle a little less than size of pan, with oiled fingers, I use olive oil. ( make own crust or Walmart has an awesome fresh dough in their deli area.) Spread 4 - 5 teaspoons pesto over crust. Just a thin layer, up to 1 inch from edge of crust. Sprinkle evenly with Parmesan cheese. Set aside.

    In a medium skillet, add remaining olive oil and heat over medium. Once hot, add chicken, salt and pepper to taste. Cook until browning and no longer pink.

    Stir in onion and 1/4 cup pesto and cook another 4 - 5 minutes, stirring occasionally. Stir in tomato. Remove from heat and cool slightly.

    Next, spread chicken pesto mixture evenly over crust.

    Sprinkle evenly with mozzarella and I then sprinkled with some red pepper flakes. ( Optional )

    Bake for 20 - 25 minutes or until crust is golden and cheese is bubbly.

    Cut and serve immediately. Delicious!
