cran-apple chicken salad

This is a combination I tried on a whim and it really paid off! Don't let the idea of stirring cranberry sauce into chicken salad scare you...it's a really delicious combination. And when you add apples and nuts to the mix...yum!

Ingredients For cran-apple chicken salad

  • 2 can
    chunk white chicken(9-10oz.ea.)
  • 1
    small apple, diced
  • 1/2 c
    celery, sliced or diced
  • 1/2 c
    walnts, pecans or almonds, chopped
  • 1/2 c
    mayo(i use the olive oil based mayo)-more or less, to taste
  • 1/4 c
    canned cranberry sauce(i have also used cherry all fruit jam-delish!)
  • salt/pepper to taste
  • romaine lettuce leaves for serving

How To Make cran-apple chicken salad

  • 1
    Drain chicken. Add apple, celery and nuts and gently stir. In a small bowl, whisk the mayo and the cranberry sauce. Add to chicken and stir to combine. Salt and pepper to taste. Serve on lettuce leaves, or sandwiches.
